This recipe is another super easy, inexpensive, and delicious one!
1 lb. ground beef
1 can tomato soup
1/2 cup salsa
1/2 cup water
6 small flour tortillas (6″), cut up into 1 inch pieces
1/2 cup grated cheese (your favourite kind – that Mexican blend is nice in this if you like it spicier but I used a mix of Cheddar and Monterey Jack)
Directions: Brown the meat in a skillet as if making tacos or spaghetti sauce. Drain the fat from the pan. Stir in the remaining ingredients except for the cheese and bring it to a boil. Reduce the heat to a simmer for 5 minutes. Top with the cheese and serve. Makes 4 servings.
